Get Your Groove On with this Lemon Sponge Cake

I’m taking a sidestep from chocolate today.. with a Lemon Sponge Cake.. (as always it is gluten-free and very very yummy delicious!!)

Heat up the oven to 180 degrees Celsius. In a mixing bowl  cream the castor sugar and butter together until smooth.  Add the eggs and milk together with the butter mixture and mix well together.  In a separate bowl sieve the flour, baking powder and salt.  Mix the peel in.  Pour the cake mixture into a pre-prepared cake pan. Bake for 30 minutes at 180.

After you have taken the cake from the oven, place it on a cooling tray to cool for a bit.


You need

  • 250 ml Castor sugar
  • 100 g Butter (softened a bit)
  • 1 tbl sp dried Coconut flakes
  • Grated lemon peel

How to

Soften the butter for about 10 seconds in the microwave. It must start melting but not be entirely runny. Add the castor sugar, coconut flakes and lemon peel together. Mix all the ingredients together until well blended.

The cake should have cooled enough now to be handled. Cut the cake through the middle to create 2 cakes. On a glass plate that is big enough sprinkle a bit of coconut. The coconut will help prevent the cake to stick to the plate. After you have placed the bottom half of the cake, ice it with just more than a quarter of the icing. Place the 2nd half. Ice the top with the rest of the icing. Sprinkle some of the coconut and lemon peel on top and VOILA

For a nice twist you can pour the batter into muffin tins. It produces delicious cupcakes!! Note that the baking time will not be half an hour but approximately 20 minutes.
